  • Har Gow chef's pick GF H

    Steamed prawn dumpling. Translucent rice-flour wrapper, whole prawn inside. The wrapper is the technique — it should be thin enough to see the colour of the prawn through it.

    Open-top dumpling. Pork and prawn filling, wrapped in a thin wonton skin. Steamed to order.

    Half duck, lacquered and roasted. Carved tableside. Served with pancakes, spring onion, cucumber, and hoisin. The skin is the point — it should shatter.

  • The Wagyu chef's pick

    A5 Wagyu, dry-aged for 45 days. The marbling is the result of patience — fat that has integrated so deeply into the muscle that the first bite dissolves before you're ready for it to. Finished tableside.
